Ingredients
Chicken:
3 boneless, skinless chicken breasts
Marsala Sauce:
1/4 cup butter 1/4 cup olive oil 1/4 cup shallots, minced 2 cloves garlic, minced 2 cups mushrooms, sliced 1/2 cup Marsala wine 1/2 cup chicken stock 1/4 teaspoon dried thyme 1/4 teaspoon dried oregano 1/4 teaspoon black pepper
Garnishes and Sides:
Salt and pepper, to taste 1/4 cup parsley, chopped 2 tablespoons capers 3 tablespoons butter Mashed potatoes, for serving
Instructions
Prepare the Chicken:
Season chicken breasts with salt and pepper. Heat a large skillet over medium-high heat with 1 tablespoon of butter and 1 tablespoon of olive oil. When the butter is melted, add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
Make the Marsala Sauce:
Reduce heat to medium and add the remaining butter and olive oil to the skillet. Add the shallots, garlic, and mushrooms and cook for 4-5 minutes, stirring occasionally, until the mushrooms are softened. Add the Marsala wine, chicken stock, thyme, oregano, and black pepper and bring to a simmer. Simmer for 5-7 minutes, or until the sauce has thickened.
Finish the Dish:
Stir in the capers and chopped parsley and simmer for an additional minute. Add the cooked chicken back to the skillet and simmer for 2-3 minutes, or until the chicken is heated through. Serve the chicken with the marsala sauce over mashed potatoes.
