Ingredients
- 1 head butter lettuce
- 2 tablespoons extra-virgin olive oil
- 1 large garlic clove, minced
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup cooked quinoa
- 1/2 cup canned black beans, rinsed and drained
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1/4 cup chopped red bell pepper
- 1/4 cup crumbled feta cheese
Instructions
- Separate the lettuce leaves and rinse them in cold water. Pat dry with paper towels or a clean kitchen towel.
- Heat the oil in a small skillet over medium heat. Add the garlic, cumin, oregano, salt and pepper and cook, stirring, for 1 minute.
- Add the quinoa, beans, cilantro, onion, bell pepper and feta cheese and cook, stirring, for 1 minute. Remove from the heat.
- Spoon the filling into the lettuce leaves and serve.
